mirabelle plums
Light mirabelle Jam with vanilla
allowed for diabetics in moderation
For 8 big jars
1.5 kilograms of mirabelles plums
100 g complete
sugar
100 g of agave syrup
1 packet of 2 g of agar agar
1 stick of vanilla bean
60 g roasted almond flakes
After cleaning the plums, cut them in half to remove the core.
Put them in a heavy saucepan.
Cut the vanilla pod in 2 and scrape the seeds with a knife. Add them with the clove in the plums.
Sprinkle with the complete sugar.
Let stand about 24 hours, stirring occasionally. The fruit will drain the liquid.
Boil the jars and turn them on a kitchen towel while you start cooking the jam.
Cook on low heat for 10 minutes, skimming if necessary.
Add the agar agar and cook for 3 more minutes.
Then add the roasted almonds and agave syrup. Mix well and remove the vanilla bean.
Fill your jars to the top.
Return the pot overnight.
It's then ready to enjoy
