Croquettes thaï de poulet

Serves 4
450 g chicken breasts
1 beaten egg
1/2 teaspoon of white pepper
1 tablespoon of green curry paste
3 lime cafre leaves to, cut into strips (or 2 tablespoons lemon zest)
2 tablespoons fish sauce
1 tablespoon rice flour
1 tablespoon of grated palm sugar (or brown sugar)
2 tablespoons minced fresh coriander
50 g of cooked green beans
a little oil for frying

Cut chicken fillets into pieces. Put in a robot with the knife accessory.
Add the pepper, egg, curry paste.
Crush by impulses to get a smooth paste.  Put the dough in a bowl.
Cut beans into small pieces.
Add to mixture with fish sauce, strips of lime cafre leaves or zest, flour, sugar, coriander.

On a floury surface, form with the mixture balls of 6 cm diameter.
Heat a little oil in a frying pan.
With a spatula, gently place the croquettes in the pan.
After a few minutes, turn and cook the other side. They cook quickly enough.

Delicious with a sweet chili sauce
The palm sugar can be bought in Asian grocery
